New design of the clamp designed by me for the Ermak 10 or Ermak 5.
It was important that when turning the knife, the grinding angle was the same as on the front.
Measurements on a professional measuring table showed a maximum deviation of 0.3 degrees.
This is negligible.
The clip is suitable for normal chef’s knives up to a sharpening angle of 10-12 degrees for the Ermak 5.
In the case of the Ermak 10, it should be significantly lower.
The clamp comes with the required table for mounting on Ermak 5 or Ermak 10.
